Speaking to the Z100 Morning Zoo radio show in the US, Mimi admitted that she regrets taking the high-profile job.
"I should've been a mentor on the show and that's it - I should've been like the Jimmy Iovine, and we love Jimmy," she told Elvis Duran.
"Jimmy did a great job! He's a little brutal sometimes and I didn't always agree with his assessments, but yeah! I mean, Jimmy knows what he's doing; he's discovered a lot of great talent."
And she insisted that she was duped into appearing alongside Nicki Minaj - with whom she famously clashed on the show.
"What happened was that I was led to believe that I was going to be in a three-panel show, like the traditional way and yet, somehow... well, I won't get into the legalities.
"Everybody's just trying to do their job, but I felt that going in the direction of making it into a reality show, was not something I signed up for."
Currently doing the interview circuit in the States, she elaborated further in another chat with the Power 105.1 Breakfast Club radio show.
"I was a professional on that show, and that's all I have to say. I was a complete professional," she insisted.
But the claws came out when Minaj was mentioned.
She answered: "Who? I don’t even remember what that was. That was a moment in my life that I’m just going to press delete."
Mariah made the headlines earlier this week when she wore a gravity defying gown to an awards show - revealing a huge portion of cleavage.
