The beauty shop owner from Lancashire was fired after she took responsibility for a disastrously cheesy advertising video for English sparkling wine.
She had ignored Sterling project manager Ricky Martin's instruction to concentrate on quality, producing a promo tape that Lord Sugar described as "a Carry On Boozing movie".
After leaving the BBC One reality show, Jenna said: "I think I would have made Lord Sugar a great business partner. I think he has missed out, but it has made me more determined to go ahead with my business idea and do it on my own.
"I am going to be successful and hopefully he may see that he did make a mistake firing me."
Team Phoenix won the task, being led by wine company owner Tom Gearing in his second consecutive week as project manager - although their work was criticised as being too "boring" and "sales orientated".
Losing team leader Ricky brought Jenna and colleague Stephen Brady back into the boardroom, where Lord Sugar warned slippery Steve that he was been "this close" to going and said he would be leading the team next week.
He said: "I think you could talk the hind legs off a donkey. It's like butter wouldn't melt in your mouth and you've always got the right answer for everything."
Next Wednesday's show will see the remaining seven candidates securing bargains for a daily deals website.
